Easy Breakfast Recipe

I often find myself running out the door in the morning, barely able to finsih making a cup of coffee. Like most people, breakfast isn't always my number one priority meal throughout the week. But it's so important! I've found a super simple, incredibly quick and easy breakfast recipe that you can make once, and enjoy all week long! Check out the video below and try it at home!

Easy Breakfast Sandwich

Serves 6-8

Prep time: 15 mins

Cook time: 12-18mins

Tools:

-Muffin Tin

-Rubber Spatula

-Air-Tight Container

Ingredients:

-6 Eggs (or 8 depending on the size of your muffin tin)

-Cheese of choice (I used a shredded Mexican blend but feel free to try swiss, cheddar, provolone, or a combination of any of your favorites!

-Veggie of Choice (I sauted peppers in onions in garlic, salt & pepper, tumeric, and cayenne)

-Bread of Choice (I always use an English Muffin becuase it's my favorite!)

-Butter or Non-Stick Cooking Spray (To grease the pan)

-Salt & Pepper

Steps:

1. Preheat the oven to 350F

2. Grease your muffin tin with some butter or use non-stick cooking spray

3. Add your favorite veggies to the bottom

Hint: If you are using very watery veggies (spinach, zucchini, eggplant) you don't have to saute them before putting them in the tin. If you are using veggies with lots of starch and fibers to their structure, I recommend cooking them down before adding (peppers, onions, potatos).

4. Crack an egg into each hole

5. Sprinkle a pinch of salt and a grind of pepper over each egg

6. Top it all off with your favorite cheese!

7. Bake in the oven for 12 mins for runnier yolks, or 15-18 mins for more set yolks

8. Once they're finished allow the tin to cool on the counter for a few minutes

9. Once they've cooled slightly, place them in an air-tight container and store in the fridge

10. When your'e ready to eat, remove an egg from the fridge and cook on High for 1 min in the microwave

I like to eat my egg sandwich open faced with hot sauce. They last up to a week in the fridge. These are perfec to grab and go and eat at work, or heat up and home and take it with you on your commute!

Get creative! Have some extra herbs lying around? Add some cilantro or parsley on top. Have a bunch of extra veggies leftover from dinner last night? Add them to mix and match! Let me know what you create. Enjoy!
